Hey. I wasn't always like this. Well not entirely like this. I mean I have always been concerned about the environment and I've always believed in treating animals well. But let me tell you, my Mom made the best roast pork loin with mashed potatoes and apple sauce and I truly loved going out to the local burger pub with my son to grab a greasy burger smothered in mushrooms and French fries! My wife's tuna salad was something to die for!!! I've changed though.
Mostly it was my wife who started me on the road to eating a mostly plant based diet. My daughters introduced us to the idea of being vegan. A kind of serious medical issue got me extra motivated to go along with the changes I was seeing on the dinner table and with the idea of being more active. I didn't put up much of a fuss, to everyone's surprise, because frankly the food we were eating was so good. After these few months that we've eating vegan I can't imagine now that I could go back to eating the way I did before.
I titled this short note "Can we be Frank" because as I thought about all of this I thought of someone who might be a good roll model for what I envision the vegan lifestyle to be. Frankly, I don't know if he was a vegan, but I do know that he cared a lot for animals and for the world around him. Who is this person, St. Francis of Assisi of course. For me there is a spiritual aspect involved here, though I'm sure that's not true for everyone. I'm going to try to be like Frank and I hope that I can encourage others to become more healthy and to promote a more healthy environment for themselves and others.
