This is how vegans get fat: Cheese Sauce

Excuse me! Do you have a moment to talk about our savior cheese sauce? 

 

All jokes aside, you have no idea how often I hear....I could never go vegan, I'd miss cheese! 

 

Well hold on to your bonnets, I'm about to change your life with...vegan cheese sauce. *oohs and ahhs from the crowd*

 

 

 

 

Now I know what you're thinking, "Well, what's it made out of? Magic?" Yes, my friends. Potato-y and carrot-y magic.

 

 

 

 

Now erase your artery clogging, addictive, gassy, bloatey, animal teat excretion ideas of cheese. Welcome to the land of things free from pregnancy hormones and antibiotics. And take this cheese and let your imagination run wild! Put it on nachos, make some mac n' cheese. Or spread it between bread, grill it, and make some tomato soup! This versatile sauce will satisfy your cheese fantasies. Welcome to the land of sexy vegan cheese. 

 

Cheddary Vegan Cheese Sauce of Your Dreams

 

Ingredients

5 small potatoes, peeled and cubed

3 carrots (the ones that you'd use for your snowman's nose), peeled and cubed

1/2 tsp garlic powder

1/2 tsp paprika

4 Tbsp mustard (use what you've got, we had spicy brown in the fridge)

2 Tbsp Nutritional Yeast (AKA...Nooch)

5 Tbsp Olive oil

1/2 tsp salt

1 tsp low sodium soy sauce OR Tamari

1/2 Lemon, just the juice

1/2 C vegetable broth

 

2 Step Process

1. Boil potatoes and carrots together until soft (about 20 minutes)

2. Combine all ingredients into a food processor (or Vitamix if you're rich and fancy), and blitz it into a creamy cheesey sauce of dreams. Salt to your preference, eat. And eat more.
