Let's talk about your jam - Easy lunch #2

Would you like to add a little super power to your lunchbox? Try making up this sandwich. Just use some good quality sprouted bread (I recommend Dave's Killer Bread for it's taste and wonderful story of redemption), your favorite nut butter and some of this all purpose chia jam.  Top it with whatever other yummy goodness you would like to add. I tried sliced bananas and coconut and really liked the first few bites, than YIKES, please bring me something savory. Maybe add a small amount of chopped salty nuts. If you have some suggestions, please let me know. This recipe comes from Oh She Glows Every Day, By Angela Liddon. Don't stop at using this on sandwiches. It's great on oatmeal, waffles, scones etc. 





Berry Chia Seed Jam


3 to 4 cups frozen berries (your choice)

1/4 C pure maple syrup, adjust to taste

Dash of fine sea salt

2 T chia seeds

1/2 tsp pure vanilla extract

1 large vanilla bean, split lengthwise and seeds scraped out

Squeeze of fresh lemon juice 


In a medium pot, stir together the berries, maple syrup and salt until combined. Bring to a simmer over medium/high heat and cook for 5 to 7 minutes, until the berries have softened. The berries will release their juices. 


Reduce the heat to medium and carefully mash the berries with a potato masher until mostly smooth.


Add the chia seeds and stir until combined. Simmer over low/medium heat, (stirring frequently. Reduce heat if necessary to avoid sticking) for 8 to 15 minutes more, until a lot of the liquid has cooked off and the mixture has thickened slightly.
