Who doesn't love a good banana bread. It’s great with coffee in the morning, adds a sweet element to lunch, a lovely ‘just got home from work and am hungry’ snack, and of course, a nice “healthy” desert after dinner. This recipe is from my lovely Grandmother so it didn't start its life as vegan, but its vegan now!
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
2-3 ripe bananas
1/2 cup softened vegan butter
2 chia seed eggs (see below)
1/4 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup cold water
1/2 cup chopped walnuts (optional)
1/2 cup vegan chocolate chips (optional)

2 tablespoons chia seeds
6 tablespoons water
Preheat oven to 350.
Mix flour, soda, and salt then set aside.
In large bowl, cream butter and sugar then beat in chia seed eggs.
Beat in vanilla and mashed bananas.
Add flour mixture and mix until blended.
Add water and beat to blend.
stir in walnuts or chocolate chips if you are using.
Bake for 1 hour and 10 minutes
