A lunchtime favorite of mine is an acai bowl. These little fruity extravaganzas hit all the right spots for me. Mostly, they are delicious and nutritious. Typically, if I have a lot of errands to run, I will swing by Jamba Juice and pick one up just to make my day a bit easier; but I decided that it was time to start making them at home. Last week I posted a homemade granola recipe and since I had some left over, it seemed like a great time to make a up an acai bowl at home. If you check in your frozen fruit section of the grocery store, or the organic freezer section of Costco, you'll find the packages of acai frozen fruit packs. You can mix these up in a ninja or bullet with some nut milk, orange juice or banana depending on the thickness you want, throw some toppings on it and you are good to go. The way I made mine today looks more like the Jamba Juice method.
One packet acai frozen fruit
1 T orange juice
1/4 cup chopped strawberries
1/4 cup blueberries
2 T coconut flakes
1 medium banana, sliced into bite sized discs
Mix the acai fruit, 1/2 of the banana and the orange juice in a ninja or other powerful blender. This will make a nice texture, but if you want to have a thicker consistency mix some of the banana in it. You may need to play here a bit to get the thickness you want. Pour this mixture in a bowl and top with the fruit. Toss a handful of granola on top and drizzle with honey. Eat right away and try not to put your face in the bowl.
