Awesome Creamy Tomato Soup

Rainy day tomato soup is just the BEST!  Finally I feel like I have perfected my recipe.  It's got depth, flavor, and is just plain yummy.  Pairs perfectly with some grilled cheese made with spicy cheese sauce on sourdough bread... perfection! 







1 onion

3 cloves garlic

1 ¼  cups veggie stock

2 medium carrots

1 medium potato

1 tsp basil

1 tsp oregano

3 cans diced tomatoes

1 tsp balsamic vinegar

2 Tbsp peanut butter

2 Tbsp maple syrup

Juice of 1 orange

Salt and pepper to taste


  1. Dice onions and garlic and saute in large pot until onions translucent.

  2. Add in diced potato and carrots. Saute for 1 minute then add veggie stock and bring to boil. Cover and reduce heat to medium until potatoes and carrots are soft (took me about 8 minutes).

  3. Add in remaining ingredients, stirring to combine. Simmer another 8 minutes.

  4. Turn off heat then blend with either an immersion blender or food processor. (Add in a little olive oil if mixture is not becoming smooth. Oil helps emulsify the mixture for a  smoother finish).
