Let's be honest, if someone gave me a pile of fresh spaghetti or a plate of zucchini, you know what your girl would choose. But it is summer, and with summer comes less clothing and more swimwear. So what's a carb loving girl to do? The most basic, hipster, pumpkin spice latte action you've seen on instagram....make your vegetables LOOK LIKE PASTA! And no, this doesn't come with a side of binge eating a bag of lime tortilla chips or crying into a loaf of bread because of...hunger.
This was no kidding deLISH!
The base of this is pretty simple, I literally went out to the garden, cut all the squash we had, and used my zoodler to turn them into spirals. Where this gets good (and keeps it from being a depressing, i meant to work out this winter but didn't kind of meal) is in the toppings and the sauce.
Today we made a tahini based cream sauce and added fresh cherry tomatoes from the garden, fresh basil, and toasted pine nuts! Our tahini sauce is from the wonderful blog Love and Lemons.
First, zoodle your zucchini! If you don't have a zoodler, get one. Or you can try slicing your zucchini really thin, but that sounds like a massive pain in the a**!
Next, put the follow ingredients into a blender or bowl.
1 Tbsp olive oil
5 Tbsp tahini
2 Tbsp lemon juice
1/2 clove of garlic, minced
4 Tbsp nutritional yeast
2 tsp maple syrup
3 tsp soy sauce or gluten free tamari
1/2 tsp turmeric powder
1/4 cup of water
salt and pepper to taste
Blend or mix up these ingredients and pour onto your zoodles! Add in your toppings and enjoy!
*You can also sauté up your zoodles in some vegan butter to warm them up.
