Apple Cider Muffins

I don't know about you, but fall/winter food is by far my favorite type of food.  I find cooking and baking more inspiring during the cooler months and the flavors are also some of my favorite.  One of my favorite things at this time of year is apple cider.  This presents a problem for me because I happen to like apple cider a bit too much and it is FULL of sugar!  So yes, while I would love to just chug the jug, I must monitor my cravings and use the delicious liquid for something good, not evil.  Therefore, I present delectable, delicious, and devilish Apple Cider Muffins!

 

These guys started there life as scones. However, due to recipe problems I just could not figure out how to solve, they became muffins instead.  (Muffin texture does not equal scone texture btw, that was the problem :).

 

 

Ingredients

 

2 cups flour

1/2 cup sugar

1/2 tsp salt

1 TBSP baking powder

1/2 TBSP cinnamon

1/2 tsp all spice

3/4 cup cold vegan butter

1/2 cup non dairy milk

1/2 cup apple cider

1/4 tsp apple cider vinegar

 

Optional

1/2 cup finely diced/shredded apple

1/2 cup chopped walnuts

 

Topping

3 TBSP vegan butter

1/2 cup brown sugar

1/2 cup chopped walnuts

 

 

Directions

 

1. Preheat oven to 400.

2. Mix together flour, sugar, salt, baking powder, and spices.

3. Crumble in cold butter with your hands until mixture feels sandy.

4. Add in milk, cider, vinegar, and the optional ingredients. Mix until well combined.

5. Butter or spray a muffin tin so muffins don't stick.

6. For an even bake, spoon 1/4 cup of the mixture into each slot on the muffin tin.

7. For the topping, melt butter in a bowl then add brown sugar and walnuts. Mix then spoon on top of each muffin.

8. Bake for 15-20 minutes. If you put the sugar topping on, make sure you put the muffins on a middle rack in the oven so the top doesn't burn.  (The baking time will depend on if you add in a fresh apple. It adds moisture so you will need to bake the muffins closer to the 20 minute mark).

9. Once muffins are out of the oven, let rest for at least 10 minutes before you take them out of the tin.
